POTATO SOUP RECIPE⬇️ 5-7 diced potatoes 1 diced onion 2 TBSP minced garlic 2 cups whole milk 1/2 cup whipping cream 1.5 cups water 2 TBSP chicken buillon (add more to taste) 1 pound bacon, chopped Toppings: Shredded cheese Bacon Green onion Greek yogurt Salt and pepper Every time I make this recipe, I change it up. It’s so easy because if you don’t have enough milk or you’re out of whipping cream, you can easily substitute it with more broth, sour cream, almond milk, or even extra flour and butter for thickness. You can use pre-cooked bacon bits as well, but it just tastes better with freshly fried bacon and the grease is perfect for the flour and butter mixture as a soup thickener. Start by frying all the chopped bacon. Remove from the pan, but save the grease. Add minced garlic and stir. Sprinkle in the flour and whisk for a minute over medium heat. Once it’s no longer lumpy, add in the butter. After butter melts add in chopped onion and cook for a few minutes until they start to soften. Pour in milk and whipping cream slowly while stirring. Pour in water and bouillon while stirring. Add in chopped potatoes (no bigger than 1/2 inch each). Heat to boiling and cook until potatoes are soft, stirring occassionaly. Using an immersion blender, blend soup until desired consistency. If you don’t have an immersion blender you can remove a bowl of potatoes and mash them with a fork.
