@The New York Times shared this recipe for Pepperpot yesterday. And I went through a range of emotions. First excitement to see our National Dish showcased. Then disappointment that they missed the mark on ingredients and steps. Then admittedly a lot of anger because a popular Guyanese recipe was being showcased but it was so wrong. I’ve spent so much time carefully creating and sharing recipes true to our flavors and traditions and honestly felt deflated. I decided to try the recipe just in case this chef unlocked some Pepperpot flavors I was missing. And I was right, this is NOT Pepperpot. It tastes okay. It has good flavor. Like a spicy stew with brown gravy but it’s lacking that distinct cassareep flavor and the cinnamon and cloves that Pepperpot is known for. It gets washed out by all of the other seasoning. I sent a letter to the editor. He responded with a “thanks for letting us know and there are as many Guyanese Pepperpot recipes as they are Proud Guyanese home cooks.” I will continue to fight for our recipes and traditions.
