Comfort Food Favourites, Part 4. Mac & Cheese - yes that is my daughter laughing at me, no this isn’t good for a January diet. Serves 4-5 people 500g pasta of your choice 200g gruyere 200g Red Leicester 200g strong sharp cheddar 200g mozzarella 70g butter 1 tbsp smoked paprika 1 tsp cayenne (optional) 1 tsp white pepper 60g plain flour 600ml milk 150ml double cream 1 tbsp Dijon mustard 2 tbsp Worcestershire sauce 2 tbsp cream cheese Salt to taste 1. boil your pasta in salted water to the packet instructions (9 mins this took) 2. Melt the butter in a pan then add the paprika, cayenne and white pepper. Add the flour cook out for 2-3 mins then start adding the milk in stages constantly stirring 3. Add the cream, mustard and Worcestershire sauce. 4. Add half of the cheese in stages, low heat and make sure it’s melted before you add more. 5. Stir through the cooked pasta then layer up in an oven proof dish with cheese in the middle and on top. 6. Bake at 170c for 25-30 mins then finish under a hot grill to crisp up the top #macandcheese #cheese #pasta #comfort #comfortfood
