Welcome back to another episode of Lazy Trader Joe’s Meals - let’s make some cheesy seasoned potatoes! I am not sure if this is technically considered a meal, but I can eat my weight in them. Here’s everything you need to make them: 24 oz baby gold potatoes, quartered 1 tbsp olive oil (or oil of your choice) 2-3 teaspoons green goddess seasoning blend ¾ pack of vegan feta cheese alternative Add the potatoes to a pot and fill with water about 1-2 inches above the potatoes. Bring it to a boil and allow them to simmer for about 20 minutes. After simmering, drain the potatoes, and transfer them to a large bowl. Coat the potatoes with oil and then add the seasoning blend and sprinkle over the vegan feta. Transfer them to a baking cheese and bake or air-fry for 40-50 minutes on 425 degrees. This creamy sausage and pepper pasta requires only 6 ingredients and 15 minutes! Welcome to another episode of Lazy Trader Joe’s Meals. Here’s everything you need to make this one: 16 oz pasta of your choice 1 package of vegan Italian-style sausage, sliced into 1-inch rounds 2 Bell Peppers, diced ½ medium onion, diced 1 package dairy-free boursincheese 1 - 26 oz jar tomato basil marinara ½ cup reserved pasta water (optional) Bring a large pot of salted water to a boil and prepare pasta according to package instructions. As the pasta cooks, heat a pan over medium heat with a little bit of oil and sautee your peppers and onions for 2-3 minutes. Add in the sausage and continue to cook for another 5-6 minutes or until the sausage is heated through. In a medium saucepan over medium heat combine the marinara sauce and boursin cheese and mix until the boursin melts into the sauce. Drain your pasta and reserve ½ cup of the pasta water as you do so.
