We had the great opportunity to harvest and using every part of this wasabi plant. Wasabi is from the cabbage family and after you grate the root, it will loose the intense flavour in about 15-20 minutes. 🌱QUICK PICKLED WASABI STEMS •8-10 xwasabi stems •1 x tbsp salt •2 x tbsp soy sauce •1 x tbsp sugar •1 x tbsp yuzu •2 x teasp rice vinegar 🥣DIRECTIONS -Chop the stems into smaller pieces -mix all the ingredients together in a bowl and transfer them to a jar pressing them or adding something heavy on top . -let it sit for 12-16 hours before consuming -store in the fridge for a week 🌱WASABI SUSHI🍱 •Pre cooked sushi rice •Wasabi leaves •any Vegetables you like •Wasabi Vegan mayo •Sesame seeds •serve with miso sauce 🥣DIRECTIONS -cook the rice and let cool -blanch the wasabi leaves for 30 seconds and let cool -prep vegan mayo -cut the vegetables in long thin stripes -once everything is ready start to layer all the ingredients on the sushi mat and roll them into a firm roll -add a dash of mayo on top and some sesame seeds -serve with you favourite sushi dip (we used peanut miso sauce) 🍚SUSHI RICE •1 x cups uncooked glutinous white rice (sushi rice) •2 x cups water •1/4 x cup rice vinegar •1/2 x tbsp vegetable oil •2 x tbsp white sugar •1/2 teaspoon salt 🌱VEGAN MAYO •1x teasp fresh wasabi paste or more depending on your taste •1x cup soya milk •1 x cup olive oil •1 x teasp salt •2 x tbsp lemon juice •1 x tbsp mustard •1 x tbsp maple syrup •1x tbsp wasabi root 🥣 DIRECTIONS -combine all ingredients (except the fresh wasabi )and blend until smooth. -grate your wasabi root and combine to your mayo -refrigerate until thick -store in the fridge up to a week #wasabi #zerowaste #zerowasterecipe #freshwasabi #fyp
