The only way im eating broccoli from now on 🥦🤤 ✨ingredients: - 1 head broccoli cut into florets - 1 can rinsed and drained chickpeas - parmesan (I use vegan parmesan) ✨must-have cashew caesar dressing (free recipe from my cookbook!!): - 1 cup raw cashews - 1 tbsp olive oil - 2 tbsp lemon juice - 1 tbsp capers - 1 tbsp caper brine - 1 tsp dijon mustard - 1/2 tsp salt - 3/4 cup water - 1 tsp garlic powder - Pinch of pepper How to: 1. Preheat oven to 425 F. Line a baking sheet with parchment paper. 2. Cut up broccoli and rinse and drain chickpeas. 3. Add the broccoli and chickpeas to a baking sheet. Spray on olive oil and season with a little salt, pepper and garlic powder. Roast for 25-30 minutes. 4. While it roasts, make the dressing by blending all the ingredients in a high speed blender. 5. Add the broccoli, chickpeas, dressing (as much or as little as you’d like), and garnish with vegan parmesan. 6. Enjoy! #caesarsalad #broccoli #healthyrecipes
