🍄 Food Hacks    👉 Which of these would you be up for trying? 1,2 or 3?    🍄 Mushrooms are very similair to humans in that they can actually produce vitamin D when in contact with the sun. Mushrooms contain ergosterol which is the precurser for Vitamin D. Lay your mushrooms in the sun for 15min-1.5 hours and you can trigger the increase in vitamin D2, which you benefit from when you eat the mushrooms. (PMID: 30322118) 🥔 When you cook and cool a potato, you get what is called “resistant starch” which is starch that you can not fully digest. ( PMID: 1609748 ) For this reason when you eat this starch, it feeds the bacteria in the gut, producing anti-inflammatory compounds, keeps us full after eating and leads to more stable blood sugar levels. ( PMID: 8092089 ) You can heat it up again after it’s cooled, but not above 140 degrees, so ideally not that hot. This could also be a good time to try out some cold potato salad! 🥗    🥩  When meat that’s rich in muscle (think: burgers and steaks) is grilled or pan-fried above 300°F or is hit by an open flame, it can form heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs) Polyphenols like rosmarinic acid, carnosol and carnosic acid, can block HCAs from forming during grilling.
