Mushrooms contain ergosterol which is the precurser for Vitamin D. Lay your mushrooms in the sun for 15min-1.5 hours and you can trigger the increase in vitamin D2, which you benefit from when you eat the mushrooms. (PMID: 30322118) 🥔 When you cook and cool a potato, you get what is called “resistant starch” which is starch that you can not fully digest. ( PMID: 1609748 ) For this reason when you eat this starch, it feeds the bacteria in the gut, producing anti-inflammatory compounds, keeps us full after eating and leads to more stable blood sugar levels.
