**NEW RECIPE** SAVE NOW We've got some glorious weather headed our way and this potato salad is just what you need for outdoor dining! You can make this ahead of time and leave it in the fridge till it's ready for serving, the longer you leave it, the better it tastes!! Perfect as a side for a bbq, a main meal or just enjoy it by itself, it's scrumptious! π Af You will need: β’ 400g baby potatoes β’ 4 - 5 tbsp mayonnaise β’ 1/2 tsp Dijon mustard β’ 1/2 tsp garlic powder β’ 2 tbsp pickled gherkin juice β’ 1/4 red onion, diced β’ 1 spring onion, finely sliced (green part only) β’ a few sprigs of chives, chopped β’ salt to taste Method: 1. Wash your potatoes and slice/dice them into even sized pieces. Place in a pan just enough water to cover them, add some salt and boil until fork tender (approx 10 - 12 minutes). Drain and cool them down under running water, leave to one side. 2. Make the dressing by adding the mayo, Dijon mustard, garlic powder and pickled gherkin juice to a bowl, whisk together. Next add the potatoes, red onion, spring onion + chives (reserve a small amount for garnishing), test for salt and adjust if needed and mix well.
