Healtier salmon pasta without all the creamy sauce! Recipe: Salmon filet Olive oil Lemon - for the juice and the zest Salt Pepper Choice of pasta Butter 1 shallot 4 gloves of garlic Red pepper flakes White wine (can use chicken broth if you donβt want wine) Sundried tomatoes Parmesan 1. Preheat the oven at 220 c and place the salmon in a baking dish β¨ 2. Drizzle the salmon with 1 tablespoon olive oil, 2 tablespoons lemon, salt and pepper. β¨ 3. Bake the salmon for 10 to 12 minutes or until it flakes easily, dont over cook. Once cooked let the salmon rest for five minutes on a chopping board/plate then break it into bite size pieces getting rid of the skin. 4. Whilst the salmon is baking, bring a pan of salted water to boil and cook pasta. I used a cup and half of pasta but you can use less or more. Make sure to save some of the pasta water. 5. While the pasta cooks, heat a table spoon of olive oil and two table spoons of butter on medium heat. 6. Add the shallot and cook for around 3 minutes then add 4 minced garlic gloves for 30 seconds. Add red pepper flakes and some salt and pepper. 7. Add 1/4 cup lemon juice, 1/4 cup of wine, I used wine but you can use chicken broth and the zest of a whole lemon. Bring to a simmer and gently simmer for 2 minutes. 8. Stir in the pasta so that it is covered in the sauce. If the sauce becomes too thick or dry add in some pasta water, I like to add in around 2 tablespoons anyway. 9. Stir in sun dried tomatoes, 1/2 cup of basil and Parmesan. 10. Stir in the flaked salmon heating lightly until the salmon is warmed through, add extra Parmesan for serving. #cooking #healthyrecipes #healthycooking
