INGREDIENTS: Main Ingredients: * 1 kg Basmati Rice * 1 kg Sliced Onions * 2 cups Oil * 1 cup Chopped Coriander Leaves * 1 cup Chopped Mint Leaves * ¼ cup Ghee * ½ cup Sultanas (Kishmish) * ½ tsp Saffron * ¼ cup Warm Milk * Yellow Food Colour (few drops) * Rose Extract (few drops) * Kewra Extract (few drops) For Marinating Mutton: * 1 kg Mutton (Lamb, on the bone) * 5 tbsp Biryani Masala Powder * 1 tbsp Red Chilli Powder * ½ tsp Turmeric Powder * 4 tbsp Ginger Garlic Paste * 1 cup Chopped Coriander Leaves * 1 cup Chopped Mint Leaves * 1 cup Yogurt * 2 cups Fried Onions * 6 Green Chillies (chopped finely) * 3 tbsp Lemon Juice * ½ cup Fried Onion Oil * Salt to taste For Biryani Masala: * ¼ cup Fennel Seeds * 2 tbsp Cumin Seeds * ¼ cup Cinnamon * 1 tbsp Black Pepper * 10 Black Cardamom * 20 Green Cardamom * 1 tbsp Cloves * 5 Mace * 4 Star Anise * 5 Black Stone Flower INSTRUCTIONS: Pre Preparation: 1. Heat oil, fry onions till golden brown, and set aside, reserving the onion-fried oil. 2. Rinse and soak basmati rice for 1 hour. 3. Chop coriander and mint leaves, and fry sultanas and cashews in ghee. 4. Soak saffron and food colour in milk. 5. Prepare Biryani Masala Powder. For Shahi Garam Masala Powder: 1. Dry roast ingredients in a pan, cool, and grind to a fine powder. Marinating Mutton: 1. Mix mutton with marinating ingredients and marinate for 1 hour to overnight. Cooking Rice: 1. Cook basmati rice until 50% cooked in boiling salted water. Assembling the Biryani: 1. In a pot, layer marinated mutton, rice, fried onions, coriander, mint leaves, cashews, and sultanas. 2. Add extracts and pour saffron milk. How to Dum Cook Biryani: 1. Place a lid and press firmly. 2. Cook on low heat for 60 mins. 3.
