Fry Daal Mash Mash (Urad) Daal : 1 Cup Oil /ghee : 1/4 cup Tomato: 3 Onion: 1 Ginger : 3-4 cloves Garlic: 3 inches root Red Chili Powder: 1 tbsp Turmeric Powder : 1 tsp Coriander powder: 1 tbsp Cumin powder: 1 tbsp Salt to taste Water: 1 cup Green Chilies – 3-4 Julienne cut ginger Coriander chopped Soak the Mash Daal for 1 Hour. Rinse Mash daal with the tap running water until water clears. In a pot boil water , add salt and turmeric. add mash daal and boil on medium heat under slightly tender. Make sure the mash daal is 80% cooked and the rest of the 20% will be done during the frying process. In a pan, add ghee and heat it up. Add, sliced onions and cook until translucent. In a blender add tomatoes, ginger and garlic & blend. Pour in and cook until oil separates. Now add f spices, red chili powder, coriander powder, cumin powder , salt and turmeric powder. Add boiled daal and cook on high heat for 2-3 minutes. Pour water and cook for another 6/7 minutes. And add some sliced green chillies to give extra flavour. Once water dries up!
