veggie & cheese egg bake 🌱 serves 4-6: 6 large eggs 1 cup shredded cheese 1 cup cottage cheese blend together and transfer to a bowl, then whisk in: 1/4 cup tapioca flour 1/2 diced red bell pepper 1/4 diced yellow onion 1 handful chopped spinach 2 chopped green onions 1 tsp garlic powder 1/2 tsp salt 1/2 tsp black pepper Transfer to greased 11 x 7 pan, top with extra cheese and bake on 375 F for 25-30 minutes Refrigerate for up to 5 days.
