Tomato Soup + Cheese Toastie = Happiness Serves 4 1.5kg ripe tomatoes 2 onions 8 garlic cloves 2 celery sticks 1 litre veg stock 1 tbsp tomato purée 1 tbsp sugar 30g basil 100ml double cream Extra Virgin Olive Oil Few small basil leaves Salt and Pepper Crusty bread Mature cheddar cheese Gruyère cheese (optional) Salted Butter 1. Half the tomatoes and drizzle with olive oil, season with salt and roast them for 20-25 mins at 200c/400f 2. Meanwhile add the onions, garlic and celery to a pan with a pinch of salt (helps them to cook evenly) and a splash of oil. Soften the veg until it just starts to brown a little then add the tomato purée 3. Cook out the purée for 2 mins then add a tbsp of sugar this is optional but just helps correct the balance of the tomatoes acidity (I tried mine before making this choice) 4. Add the now roasted tomatoes and the stock. Simmer until all the veg is completely tender approx 20-25 mins. Before adding the basil and the cream then blending. 5. You could pass this through a sieve but as it’s a home comforts meal leaving it whole is my preference. You should also now check for seasoning again notice in the video I seasoned it again after blending. 6. Sandwich plenty of your cheese in between two pieces of crusty bread, fry this in foaming butter until golden, crispy and oozing inside. Pressing them down helps with forming the crust and melting the cheese. 7. Serve the soup with a drizzle of olive oil, a few basil leaves and extra black pepper for me. #soup #tomatosoup #comfortfood #asmr #cooking
