Chicken Vodka Parm Sandwiches ๐ This hit the spot! Perfect dinner for summer and a total crowd pleaser. It only took me probably around 20 mins to make too. This would be great for a picnic or lunch as well. Hereโs the recipe for you! RECIPE: slice two chicken breasts in half and pound thin. Season with salt and pepper. Coat in a thin amount of flour, then egg, then into some Italian breadcrumbs with Parmesan mixed in. Shallow fry in oil for 4-5 mins per side or until golden and 165 degrees internally. Slice your loaf of bread down the middle and top with your favorite sauce (marinara, vodka, or whatever you have). Add your chicken and mozzarella. Broil until bubbling. Mix olive oil, lemon juice, salt, pepper, and a pinch of Italian seasoning and toss in your arugula. Add to the top of your sandwiches and serve. โ
