Jelly Slice Recipe (Gluten-Free) Before reading the recipe below, please note that I doubled the amount of biscuit base and jelly. There are also lots of recipes online that involve buying biscuits from the supermarket, crushing them, and adding butter. However, I prefer this biscuit base. Ingredients: - 1 packet of Raspberry Jelly - 1 cup plain flour - 1/2 cup brown sugar - 1/2 cup desiccated coconut - 125g butter - 3 teaspoons Gelatine - 1/3 Cup Boiling Water - 1 Tin Sweetened Condensed Milk - Juice from 1 Lemon Instructions: 1. Line a slice tin with baking paper and set it aside. I used a rectangle 28 x 21cm. 2. Prepare the jelly according to the packet instructions and set it aside on the bench to cool. Do not place the jelly in the fridge, as you don't want it to set just yet. 3. To make the base, mix the dry ingredients and add the melted butter. Once combined, press into the baking tray. I baked this in the oven at 180°C for 18 minutes. It’s ready when it starts to go golden on top. 4. To make the middle layer, mix the sweetened condensed milk and lemon juice in a bowl. Add the dissolved gelatine mixture and mix until completely combined. 5. Once the biscuit base has cooled, pour the middle layer mixture on top and place it into the fridge until set (approximately 1 hour). 6. Gently pour the cooled jelly over the top of the slice and refrigerate for 4 hours or until set. 7. Cut into slices and store in an airtight container in the fridge.
