Chocolate cross buns Ok chocolate buns are superior. I’ve made 3 different batches of experimental types of HCB the past week. I was shocked to see people actually rate traditional more than choc. It’s in my nature to test fairly & I’ve come to the conclusion that I need to stop. I can eat hcb every week for the rest of my life choc or traditional. They’re so damn good. I can’t remember this recipe exactly but follow the guides on the video & you will succeed. I’m frothing over the addition of spice, it’s a best of both world scenario. I didn’t do it with this video but it’s valid. It’s in the measurements if you’re frisky enough to give it a go. The texture of the dough should be similar to the video. For some reason the first time this milk flour ratio worked, other couple times I needed to add an extra 100g flour. So please, eyes are key & go for texture. For rolling into balls, lightly wet your hands 🙌🏾 Measurements: - 1 1/4tbs yeast - 300g milk - 2 size 6 eggs (bigger egg=more flour) - 70g butter - 500g flour - 80g brown sugar - 1tsp salt - 250g blitzed deep dark chocolate - 2tsp cinnamon (optional) - 2tsp allspice (optional) - 1tsp mixed spice (optional) Crosses: - 40g water - 50g flour - 1/2tsp salt - Texture should be gloopy not super runny Glaze: - 1/4cup icing sugar - 2-4tbs Boiling water till thin yet textured Method; - Combine wet & dry - Mix 10mins - Proof 1hr - Divvy 12 - Proof 45 or double in size - Fan bake 180c 22mjns - Brush glaze & enjoy hot #kitchenbymatt #easyrecipe #chocolatecrossbuns #hotcrossbuns #easter #easterrecipes
