BAGELS to celebrate ❤️. Dough Recipe: 1 3/4 cups of warm water (it should feel just warm to touch - not hot). 2 tbsp caster sugar, brown sugar or maple syrup 2 1/2 tsp dry active yeast (or 1 sachet) 4 1/2 cups of all purpose flour Pinch of salt Water bath recipe: 1 1/5 litres of water 1/4 cup brown sugar or maple syrup 1 tsp bicarb soda Vegan egg wash: 1/4 cup soy milk 2 tsp maple syrup Bagel Seasoning - Store brought @mingleseasoning have one or you can make it yourself with white and black sesame seeds, dried garlic, dried onion, poppy seeds and salt. Method: - Add your warm water, sugar and yeast into a small bowl. The water should look foamy or cloudy. - Add your dry ingredients into a seperate mixing bowl - Add your liquids into the bowl and knees with your hands or mix with a stand mixer until it forms a smooth dough ball. - Cover and rest for 60-90mins in a warm place until it almost doubles in size. - Remove the dough from the bowl onto a lightly floured surface and cut into 6-8 pieces. - Roll the dough into smooth balls (try to roll any imperfections to the bottom of the dough ball so it's smooth on top) - Add to a lined baking tray - cover and rest for another 30mins in a warm place. - When the dough is fluffy - place your thumb through the centre of your dough ball and roll the dough around. Place back on the tray. - Start your water bath by adding all of your ingredients into a large pot and bring to the boil - Preheat your oven to 200 degrees Celsius whilst the water boils - Boil your bagels on each side for 1 minute. Remove carefully and place back on your baking tray. Add your soy milk and maple together and lightly brush the top of your bagel. - Add your bagel seasoning to a shallow bowl or plate - Dip your bagel facedown into a bowl of bagel seasoning and place back onto your lined baking tray (make sure the bagels aren't touching. - Bake for around 20mins or until golden brown - bagels are best enjoyed on day 1 or 2
