Ramadan Cravings part 6: Chicken birria style tacos. You guys have been blowing up my DM’s for this recipe & it’s finally here😭 these tacos are extremely moreish, bursting with flavour & it’s not hard to eat a whole plateful in one sitting. I’ve used my homemade tortilla recipe here which elevates the dish SO much they’re easier to make than you’d think! (Recipe on reels) These are great for when hosting because they’re always a favourite and get rave reviews even weeks after they’ve been served😂 prep them in advance and pan fry them fresh right before serving! Full recipe (makes 11 tacos) 1 boneless chicken leg or 2 chicken thighs 1 yellow onion roughly diced 1 whole bulb of garlic peeled 1tsp whole dried chillies 1.5 tsp cumin seeds 5-6 whole peppercorns 2 bay leaves 2tsp tomato purée Dry spices: 1.5 tsp smoked paprika or 2tsp regular paprika if you don’t have any 1 tsp coriander powder 1tsp cumin powder 1 tsp salt 1 chicken stock cube half a bell pepper roughly chopped 1tsp dried Italian herbs 4-5 tomatoes quartered Bunch or coriander roughly chopped 1 tablespoon jalapeños 7 cups water cheddar cheese •lightly marinate chicken in paprika, salt & pepper then sear it off in the pan for 2-3 mins on each side on a medium- high heat then set aside •Add in the onion,pepper,garlic,cumin,bay leaf,dried chillis & peppercorns - sauté on high heat for about 5 mins •Add the tomato purée sautee, the add the dry spices and cook them out with a little bit of water for about 5 mins on Medium heat •Add in the tomatoes, coriander & jalapeños- add the chicken back in, give it a stir and add the water. •Close the Lid and let it simmer away for 2hrs on a medium heat, occasionally stirring. Take the chicken out after 1.5hrs and shred •Once the sauce is ready use a potato masher to roughly mash it up and try and remove some peppercorns - ladle out 1 cup of the sauce and set it aside- use as a dipping sauce for the tacos later on •Add the chicken back in •soak the tortilla in the birria mixture then add cheese & some of the chicken, don’t over fill •Heat up a pan on medium w oil -pan fry the tacos on each side until crispy - serve with lime & pico #ramadan #ramadan2023 #chickentaco
