🔥Buffalo Chicken Dip Stuffed Peppers🔥 In a mixing bowl combine: • 4 cups boneless skinless chicken breast (I shred chicken breast from a rotisserie chicken from Sam’s club) • 4 light creamy Swiss laughing cow cheese wedges • 1/2 cup nonfat Greek yogurt • 1/2 cup Buffalo sauce • about 1/2 a packet of ranch seasoning/dip mix Cut peppers in half and remove seeds/veins. Fill each pepper half with 1/2 cup of Buffalo chicken dip. Top with 1 tbsp of part skim reduced fat mozzarella cheese (I use Lidl brand) and Trader Joe’s ranch seasoning. Add a small amount of water to baking pan to produce steam to help cook the peppers. Cook on 350 degrees for about 40 minutes and enjoy! This recipe makes 8 servings peppers. Each pepper is 174 calories with 6g of fat, 5g of carbs, and 25g of protein. 1 ww point for 1 pepper, or 3 points for 2.
