Focaccia, keep reading for recipe ⬇️ ‼️ URGENT: there is a link in my bio to help @doaa_sulaiman19 her story is in my last video: @Wemo | 🇹🇳 ‼️ Note: I saw the stuffing technique from @_lacebakes_ and decided to implement it in this recipe. Turned out even better than usual 🫶🏻🥰 For the dough: - 350g warm water - 5g instant yeast - 5g honey - 1 tsp salt - 440g all purpose flour - 78ml olive oil (divided) - Thyme For the filling: - 2 garlic heads - 2 tsp olive oil - 100g shredded mozzarella cheese To top: - 1/3 cup honey - 1 tsp chili flakes - 2 tsp harissa For the flowers and “mushrooms”: - Mozzarella cheese - Peppers 1. In a bowl whisk the water, honey, 15ml olive oil, and instant yeast. Add the flour and salt, mix until a dough forms. 2. Gather the dough into a rough ball and place it in a greased bowl ( use 20ml olive oil for the bowl ). Cover with plastic film and refrigerate for 24 hours. (yes I said 24 hours. Idc if you’re inpatient LISTEN TO MY INSTRUCTIONS 😭🫵) 3. Once the dough has risen, do a set of stretch and folds and form the dough into a ball. 4. grease a 25x25cm pan with 30ml of olive oil and place the dough inside. Stretch it out into a rectangle and top with roasted garlic cloves + cheese. Fold each side to seal, pinch it shut, and flip it upside down. Note: cut the tops of your garlic cloves off and top with 1 tsp of olive oil each. Cover with foil then air fry at 400F until golden brown. 5. After stuffing the dough, cover with plastic film and allow to proof in a warm environment for 4 hours. ( yes I said 4 hours. COPE ) 6. Top with dough with another 10 ml of olive oil and dimple it. Use your oily fingers to coat the thyme then add it to the focaccia. 7. Bake in a preheated oven at 375F for 40 mins. Add the flower shaped cheese / peppers and bake for another 5 minutes. ( the flowers are optional) 8. Cook the honey, harissa and chilli flakes until it turns into a nice red colour.
