Smoked Bison JalapeƱo Cheddar Sausage Corn Muffins that won the hearts of the people at the Wild Fork Foods SXSW Rhythm & Roast event in Austin, TX a few weekends ago. Full recipe below. Ingredients: *Muffins- - 1 pack of @Wild Fork Bison Cheddar JalapeƱo Sausage - 1/3 cup honey - 1/2 cup sour cream - 1/2 cup buttermilk - 2 eggs - 1 cup shredded cheddar cheese - 2 boxes favorite unsweetened corn muffin mix - pinch of salt *Honey Butter Ingredients: - 1 stick unsalted butter (softened) - 4 TBSP honey - pinch of salt Corn Muffin Directions: 1. Slice sausage into 4ths or dice. 2. Combine eggs, honey, sour cream, buttermilk and combine together. 3. Add in muffin mix, cheese, salt & mix in. Leave it lumpy. 4. Spray muffin tin with non stick oil and scoop in corn muffin mix filling about 2/3 of the way. 5. Insert sausage in the middle and press down into the mix. 6. Place in @Traeger Grills rolling 350Ā° for about 25 minutes or until the muffin is done. Pull top with honey or the honey butter and ENJOY! Honey Butter Directions: 1. Combine butter, honey, salt and mix together well.
