🥣 Turkey Noodle Soup 🥣 because sometimes soups just sound good in the summer! I swapped out shredded chicken for ground turkey and LOVED the flavor. So easy and so yummy! 1/2 Tablespoon butter 2 carrots, peeled and sliced 2 ribs celery, sliced 1/2 onion, diced Salt and pepper 1 teaspoon olive oil 1 lb ground turkey (lean) 4 cups chicken broth 1 teaspoon dried thyme and rosemary, each 1/2 teaspoon dried dill Juice of 1/2 a lemon 3 cups egg noodles Handful of fresh parsley, chopped Melt butter in a pot over medium heat. Once melted, add carrots, celery, onion, pinch of salt and pepper. Sautee for 4-5 minutes or until onions are translucent. Remove veggies from the pot and set aside. Add oil and ground turkey to the pot with another pinch of salt and pepper (it’s important to layer on seasonings at each step!). Break up the turkey while cooking. When the turkey is cooked through add the veggies back in with the broth, seasonings, lemon juice, and noodles. Bring to a boil. Add pasta once boiling and cook until al dente (about 6-8 minutes). Turn off heat and stir in parsley. Taste and add more salt and pepper as needed. #soup #turkeysoup #soupinthesummer
