One pot chicken orzo You will need to serve 2 120g orzo 1 courgette 200g cherry tomatoes 1 chicken breast 1 red onion 3 garlic cloves 5 sun dried tomatoes 1 tbsp tomato puree 1 tsp smoked paprika 1 stock cube Fresh basil 1 tbsp crème fraiche Parmesan 1. Cut the chicken in small pieces and fry in olive oil. 2. Add the onion and garlic and fry for a couple of minutes. 3. Add in the chopped sundried tomatoes and tomato puree. 4. Add the cherry tomatoes, courgette and smoked paprika. Mix and cook for a couple more minutes. 5. Add the orzo and 250ml water, and stock cube. 6. Bring to a gentle simmer, mixing from time to time. Cook until the orzo is al dente. 7. Finish with grated parmesan, chopped fresh basil, and crème fraiche.
