Family dinner idea | Chicken Katsu over garlic mashed potatoes and maple pecan Brussels sprouts. Maple pecan brussel sprouts recipe: 4 cups brussel sprouts, trimmed + halved 1 cup pecans, chopped 5 garlic cloves, minced 3 tbsp coconut oil, melted 1 tbsp maple syrup 3 finger pinch of pink salt Fresh ground pepper Preheat oven to 400 degrees Mix brussel sprouts, pecans, minced garlic, coconut oil, maple syrup, and salt + pepper until completely combined. Spread on a baking sheet in an even layer and bake in the oven for 20-25 minutes, tossing halfway through. Once golden brown on top they’re ready! Chicken Katsu recipe: Marinade: 5 chicken breast (Flatten chicken + slice into tenderloins) 3 cups milk 1 tsp salt 2 tsp garlic powder 1/2 tsp Fresh black pepper Chicken Katsu: 16oz panko bread crumbs 5 eggs, whisked 2 1/2 cups flour Add all marinade ingredients to a large bowl. Flatten chicken and slice into smaller pieces if you’re not using tenderloins. Cover your bowl with plastic wrap and marinate your chicken in the fridge overnight. After you marinate your chicken, place each chicken breast in flour, dip into egg mixture, then press into panko crumbs until coated on both sides. To save for a later date: wrap each chicken breast in plastic wrap and place in a freezer safe ziplock bag and place in freezer. When ready to use, defrost in fridge overnight or place on counter for a few hours to thaw. To cook right away: Bake in oven at 400F for 25-30 minutes or until chicken temperature is 165F. Garlic mashed potatoes recipe: 3 pounds potatoes (I used Russet potatoes but recommend Yukon gold) 5 garlic cloves, minced fine sea salt 3 tablespoons butter 1/2 cup whole milk 2 ounces cream cheese, room temperature toppings: chopped fresh chives Peel and cut your potatoes in chunks. Boil your potatoes in salted water for 10-15 minutes or until they are tender. You should be able to easily poke your fork through. Drain all the water. Mash your potatoes, add in your milk, butter, and fold in your cream cheese. Once melted add in your minced garlic, salt and pepper. Serve while hot! Enjoy!🥰
