#ad Summer is finally here and I'm celebrating by making one of my favourite desserts, Mango Tapioca Pudding, using @goldencircleau Mango Nectar Ingredients: 1 cup tapioca pearls 6 cups water 250ml Golden Circle Mango Nectar 1 fresh mango, peeled and pip removed 240ml cup full-fat coconut milk 200ml cup condensed milk Garnishing: almond/coconut flakes and cubed fresh mango Method: In a pot, add tapioca pearls and water. Bring water to low-medium heat, constantly stirring to prevent pearls from sticking. After 10 minutes, cover the pot and let sit for 3 minutes. Wash and Drain the pearls under cold water. Leave in cold water while preparing the rest of the mixture. In a blender, add one mango,Golden Circle mango nectar, coconut milk, and condensed milk and blend. Fold in drained tapioca pearls and serve with fresh mangos on-top. Chill for 2hrs + and serve.
