Let the batter sit, but don’t leave it (stay there and stare at it. JK). Heat a griddle on high but don’t burn it. Lightly grease it but don’t be cheap, add that oil. Pour the batter, drop it like it’s hot. When the first bubbles appear, add a teaspoon of Dulce de leche at the center of your pancake, using your fingers. Lick your fingers. Cover with some more batter then flip without overthinking it. Cook for 2 more minutes. Repeat until there is no more batter left.
